Cascara is the dried fruit shell left over after the two coffee beans have been removed from each coffee fruit. Cascara normally ends up as compost at many farms, but with careful drying and attention you can create a wonderful tea that brews a savory, sweet cup.

How to brew cascara: Steep 3 tablespoons (15 grams) of cascara in 12oz of filtered water (just off the boil) for 5 minutes.

Cascara is delicious served hot or iced, or sweetened with a touch of honey.  It can also be added to granola/trail mix and has great potential for other culinary uses!
